The Cellars in Bollano

Since the harvest of 2008 the process of vinification has been moved to the cellars of Bollano, a large and easily accessible hall built at the beginning of the 20th century and brick-faced. The cellar measures 400m2 on a single floor at ground level. This helps to keep the internal temperature stable, varying very little when compared to the external temperature. All vinification and storage operations are carried out in stainless steel barrels at electronically controlled temperatures. The tonneaux and barriques are kept in the fresh and humid basement. When carefully balanced, ageing the wine in wooden barrels gives it greater structure and durability.
