The Olive Tree, so characteristic of our countryside, plays a double role: a supplier of good oil, and whose cultivation integrates and roots us in the landscape. The groves are difficult to mechanise and have a poor production; the trees are pruned in the shape of inverted vases. The harvest is made by hand, with ladders, combs and nets on the ground. The harvest starts at the beginning of November and continues until mid-December. Our plantation covers 25 hectares with about 5000 olive trees spread over the beautiful “crete senesi”: The varieties grown are Frantoio (75%), Leccino (10%), Moraiolo (12%) and others (3%). The oil yield is around 14-16% of the weight of the olives.
