“Idleness is the enemy of the soul; and therefore the brethren ought to be employed in manual labor at certain times, at others, in devout reading. ……If, however, the needs of the place, or poverty should require that they do the work of gathering the harvest themselves, let them not be downcast, for then are they monks in truth, if they live by the work of their hands, as did also our forefathers and the Apostles. …” (Chap. XLVIII – Of the daily work).

In our enterprise an integrated productive farming process is applied, with a low environmental impact. It is a farming model which respects natural resources and the conservation of biodiversity. The operations and permitted cultivations are based on principles inspired by the control of erosion and the maintenance of the fertility of the land through crop rotation and ‘green’ fertilizers, reducing fertilization with synthetic products and chemical herbicides. We grow: Spelt, Hard and soft wheat, Barley, Oats, Beans, Chickpeas and Alessandrine grain. 40 ha of cultivated truffle-grounds are also present for the sole harvesting of truffles.
