Production of wine is an old tradition at the Abbey. The construction, in brick, of the historic wine-cellar goes back to the second half of the XIVth century. It is composed of two parts: an area for the vinification of the grapes, and another for the ageing of the wine in wood barrels. The space occupied by the cellar, the number and size of the casks and vats, indicates that the Abbey not only worked on its own production but also that of local vintners. Since the harvest of 2008 the process of vinification is carried out in the cellars of Bollano, built at the beginning of the XXth century and brick-faced, which are bigger and afford easier access. The Abbey’s wine-cellar may be visited and our wine and oil tasted, entry is free. |
